Seed starting?

Thank you all for answering my questions about whether it's too late to plant! While my raised beds are being built, I'd like to get the seeds started, but I have some questions. I've never done this before, so I'm pretty clueless.

There are a *lot* more seeds in the seed packets I have than I have room to plant. Should I only start a few more than I have room to plant, or twice as many as I have room for? Start them all and pick the ones that look healthiest? I've got egg cartons to start the seeds in. How many seeds can go in each little egg place holder, or whatever it's called? One per space, a couple per space?
